Today… I will be sharing with you one of my favourite cupcake recipes!
Coconut Lime Cupcakes with Buttercream Icing! YUM!
Here’s the ingredients:
- 140g plain flour (I used rice flour because I am gluten intolerant)
- 70g coconut flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 100g granulated sugar (I used coconut sugar)
- 50g maple syrup
- 50g desiccated coconut
- 2 large eggs
- 35g coconut oil
- 35g butter
- 400ml full fat coconut milk
- 1 tsp vanilla extract
- Juice of 2 limes
- 120g butter
- 300g icing sugar
- 30g milk
Preheat the oven to 170 fan forced. Get out cupcake holders enough to fit 12 cupcakes or more depending on size.
Now, mix the coconut flour, plain flour, sugar, desiccated coconut, bicarb soda and baking powder together in one bowl, this is all the dry ingredients so do put the wet ones in yet. Next, mix all the wet ingredients in one bowl, eggs, oil, butter (Melt the butter in a pot until it is liquid), maple syrup, limes, vanilla and coconut milk.
Now, pour both the mixes together and stir. It should be a little bit lumpy. Then, pour them into the cupcake holders and pop them into the oven for 20 mins.
